Sirloin Steak (Trimmings) with Mushrooms

Brookshire Farm's organ concert to raise funds for the Vermilion Arts Council included food and wine.  Bob created amazing appetizers, including Korean Beef Bites made with Brookshire Farm top sirloin steak. Because steaks are not square, trimmings from the sirloin steaks were left over – perfect for a quick supper.

Add to the mix the beautiful King Oyster Mushrooms we bought from a vendor in the Old Metairie Garden Club Farmer’s Market on Tuesday! (See us there every month on the third Tuesday – next market is September 18).

Combine with a couple of early Fall tomatoes from our garden,  topped with parsley from our Spring garden that we had chopped and air-dried, and the result was delicious. Better yet, it only took about 15 minutes to make:

Here is the recipe:

Brown the Trimmings from the Sirloin Steak in your favorite oil, i.e., beef fat or olive oil.

To make the stewed mushroom topping -

-A shallot, chopped and sautéed it in grass-fed butter;
-Add sliced King Oyster Mushrooms and cooked to tender;
-Add a glug of white wine (4 or 5 tablespoons), and cooked out the liquid;
-Add chopped tomato and cook until tomatoes are well cooked
-Add chopped parsley (air-dried from a great crop in our garden this Spring)
-Salt to taste

Serve the mushroom tomato stew over the browned sirloin steak trimmings and enjoy –

This same dish can be made with steak (Sirloin, New York Strip, Ribeye,
or Filet) cooked to your desired temperature.  Make it into an
open-faced sandwich by serving it over ciabatta bread that was
pan-toasted in olive oil (think of it as Italy’s answer to Texas Toast).
